鶏もも肉と大根の塩麴煮 Chicken Thigh and Daikon Simmered with Shio-Koji

「鶏もも肉と大根の塩麴煮」は、塩麴の力で鶏肉が驚くほど柔らかく、素材の旨みを生かした家庭向きの煮物。
鶏もも肉はたんぱく質と鉄分を補え、大根は消化を助ける酵素や食物繊維が豊富です。

Chicken Thigh and Daikon Simmered with Shio-Koji

This comforting home-style simmered dish features chicken thigh gently braised with daikon radish,
made exceptionally tender by the natural enzymes in shio-koji (salted rice malt).
Chicken thigh provides high-quality protein and iron, while daikon is rich in digestive enzymes and dietary fiber.
The fermented properties of shio-koji help support gut health, creating a deeply satisfying flavor with minimal seasoning.

Gentle on the body and well suited for make-ahead meals.


【材料】

鶏もも肉 1枚(約250g)
大根 1/3本(5〜6cm分)

塩麹 大さじ2
水 200〜250㏄
酒 大さじ1

生姜スライス(あれば) 少し

ごま油  小さじ1(仕上げ用・省いてもOK)

ブロッコリー又は白ごま(あれば) 適量


【作り方】

鶏もも肉は大きめの一口大に切る

塩麹大さじ1を鶏肉に揉みこんで、10〜30分ほど置く(時間があれば冷蔵庫で)
※ これでお肉がしっとり&塩分ひかえめでも旨みが出ます

大根は1cmくらいの半月切り(またはイチョウ切り)

鍋に大根、水200㏄~250㏄、酒大さじ1、生姜スライスを入れて中火で5分ほど煮る

大根が少しやわらいだら、塩麹につけた鶏肉を入れる

弱めの中火で 15分ほどコトコト煮てアクが出たら軽く取る

最後に塩麹 大さじ1(味を見ながら)ごま油小さじ1を加えて火を止める

器に盛って、白ごま又はブロッコリーを添えて完成


Ingredients

1 chicken thigh (about 250 g), skin on

1/3 daikon radish (about 5–6 cm thick)

2 Tbsp shio-koji, divided

200–250 ml water

1 Tbsp sake

A few slices ginger (optional)

1 tsp sesame oil (for finishing, optional)

Broccoli or white sesame seeds, for garnish (optional)


Instructions

Cut the chicken thigh into large bite-size pieces.

Massage 1 Tbsp shio-koji into the chicken and let rest for 10–30 minutes (refrigerate if time allows).
This step keeps the meat moist and flavorful even with less salt.

Cut the daikon into 1 cm thick half-moon slices (or quarter-rounds).

In a pot, combine the daikon, water, sake, and ginger. Simmer over medium heat for about 5 minutes.

Once the daikon begins to soften, add the marinated chicken.

Lower to medium-low heat and gently simmer for about 15 minutes, skimming off any foam.

Taste, then add the remaining 1 Tbsp shio-koji as needed. Finish with sesame oil and turn off the heat.

Serve in bowls and garnish with broccoli or white sesame seeds.
