Seasoned with chicken stock, salt, and pepper, it highlights the natural sweetness of bok choy and the mild richness of the egg—clean,
delicate flavors often appreciated in washoku (Japanese home-style cooking).
The smooth texture also makes it easy to eat, and its bright colors add a pleasant touch to the table.
In Japan, dishes like this are often described as yasashii aji (やさしい味), meaning “a gentle, comforting flavor.”
It’s the kind of mild, nourishing dish frequently prepared in everyday home cooking, valued for being both light and satisfying.
【材料】
青梗菜 2株(ざく切り)
卵 2個
にんにく 少々(みじん切り)
ごま油 小さじ1
水 50ml
鶏がらスープの素 小さじ1/2
塩 少々
胡椒 少々
片栗粉 小さじ2(同量の水で溶く)
【作り方】
卵を軽く塩を加えてふんわり炒め、いったん取り出す
ごま油でにんにくを炒め、香りが出たら青梗菜の茎→葉の順に炒める
水+鶏がらスープの素を入れて1分ほど蒸し炒め
水溶き片栗粉で軽くとろみをつける
卵を戻し入れて全体をやさしく混ぜる
アレンジ:オイスターソース風味(コクをプラス)
基本の作り方にオイスターソース小さじ1/2〜1を加えるだけ
ご飯にも、おつまみにも合うしっかり味に
仕上げにごま油をほんの少したらすと香ばしさアップ
Ingredients
2 heads bok choy, roughly chopped
2 eggs
A small amount of minced garlic
1 tsp sesame oil
50 ml water
½ tsp chicken stock powder
Pinch of salt
Pinch of pepper
2 tsp potato starch (mixed with equal amount of water)
Instructions
Lightly season the eggs with salt, scramble gently until soft and fluffy, then set aside.
Heat sesame oil in a pan, sauté the garlic until fragrant, then add the bok choy—stems first, leaves second.
Add water and chicken stock powder, cover, and steam-fry for about 1 minute.
Stir in the starch slurry to create a light, glossy thickness.
Return the eggs to the pan and gently fold everything together.
Variation: Oyster Sauce Style
Adding ½–1 teaspoon of oyster sauce gives the dish a richer, more savory flavor.
This version pairs well with rice or with drinks.
A final drizzle of sesame oil enhances the aroma even more.
