【材料】(2人分)
豚肉(しゃぶしゃぶ用) 200g
オクラ 8本
みょうが 3個
大葉 5枚
梅干し 2個
めんつゆ(希釈済み、またはストレートタイプ) 大さじ2
ごま油 小さじ1
塩 小さじ1(ゆで用)
酒 大さじ2(ゆで用)
白いりごま 適量
【作り方】
オクラはヘタとガクを取り、板ずりして塩ゆでする。
冷めたら小口切りにする。
みょうがは小口切りにする。
大葉は千切りにし、さっと水にさらして水気を切る。
梅干しは種を取り除き、包丁でたたく。
ボウルに梅肉・めんつゆ・ごま油を入れてよく混ぜ、梅だれを作る。
鍋にたっぷりの湯を沸かし、塩と酒を加える。
豚肉を2〜3枚ずつ広げながら入れ、
色が変わったら冷水にとって冷まし、水気をしっかり切る。
ボウルに豚肉・オクラ・みょうがを入れ、梅だれで和える。
器に盛り、大葉と白いりごまを散らして完成。
※オクラは板ずりすることで表面の産毛が取れ、色鮮やかに仕上がります。
※梅干しの塩分によってめんつゆの量を調整してください。甘みが欲しい場合は少量の砂糖を加えても美味しいです。
※豚肉は茹ですぎると固くなるため、色が変わったらすぐに引き上げるのがコツです。
※みょうがの代わりに新しょうがの甘酢漬けを加えても、さっぱりとした風味が楽しめます。
※仕上げにラー油を数滴垂らすと、ピリ辛のアクセントが加わります。
Ingredients (serves 2)
200g thinly sliced pork (shabu-shabu cut)
8 okra
3 myoga (Japanese ginger)
5 shiso (perilla) leaves
2 umeboshi (pickled plums)
2 tbsp mentsuyu noodle sauce (diluted or ready-to-use)
1 tsp sesame oil
1 tsp salt (for blanching)
2 tbsp sake (for blanching)
Toasted white sesame seeds (as needed)
Instructions
Trim the stem and calyx from the okra, rub with salt to remove the fuzz, and blanch. Once cooled, slice into thin rounds.
Thinly slice the myoga.
Finely shred the shiso leaves, rinse briefly in water, and drain well.
Remove the pits from the umeboshi and mash with a knife.
In a bowl, combine the mashed umeboshi, mentsuyu, and sesame oil to make the dressing.
Bring plenty of water to a boil in a pot and add the salt and sake.
Add the pork 2–3 slices at a time, spreading them out.
Once the color changes, transfer to cold water to cool, then drain thoroughly.
In a bowl, combine the pork, okra, and myoga, and toss with the ume dressing.
Plate and scatter the shiso and sesame seeds over the top to finish.
※ Rubbing the okra with salt removes the surface fuzz and helps it keep a vibrant color.
※ Adjust the amount of mentsuyu depending on the saltiness of your umeboshi — a touch of sugar works well if you’d like a little sweetness.
※ Pork toughens if overcooked — remove it from the water as soon as it changes color.
※ Sweet pickled young ginger can be used in place of myoga for a similarly refreshing flavor.
※ A few drops of chili oil at the end add a spicy accent.
