The gentle bitterness and sweetness of the peppers layer beautifully over the clam and white wine broth, giving the familiar pasta a fresh seasonal twist.
Clams are rich in taurine, which supports liver function, while their iron and vitamin B12 help prevent anemia.
Sweet green peppers have almost no heat and are packed with vitamin C and carotene. They pair wonderfully with oil, and a quick sauté brings out their natural sweetness.
Emulsifying the clam broth with the pasta water is the single biggest key to a restaurant-quality finish.

スパゲッティ 160g
あさり(砂抜き済み) 300g
甘唐辛子(万願寺唐辛子・伏見唐辛子など) 6本
にんにく 2かけ
赤唐辛子(種を除く) 1本
白ワイン 100ml
オリーブオイル 大さじ2
塩 小さじ2(茹で用・お湯1Lに対して)
イタリアンパセリ(みじん切り) 適量
仕上げ用オリーブオイル 大さじ1
【作り方】
あさりは殻をこすり合わせてよく洗い、水気を切っておく。
甘唐辛子はヘタを取り、斜め薄切りにする(大きめなら種も除く)。
にんにくはみじん切りにする。
鍋にお湯1Lを沸かして塩小さじ2を加え、
スパゲッティを袋の表示より1分短く茹で始める。
フライパンにオリーブオイル・にんにく・赤唐辛子を入れ、
弱火でじっくり香りを出す。
にんにくが色づき始めたら甘唐辛子を加えて中火でさっと炒める。
あさりと白ワインを加えて蓋をし、
中火で2〜3分、あさりの口が開くまで蒸す。
あさりの口が開いたら、パスタの茹で汁をお玉1杯分(約80ml)加え、
フライパンを揺すりながらソースを乳化させる。
茹で上がったスパゲッティをフライパンに加え、
ソースを絡めながら1分ほど煮て仕上げる。
火を止めて仕上げのオリーブオイルを回しかけ、
イタリアンパセリを散らして完成。
※あさりは加熱しすぎると身が固くなるため、口が開いたら手早く仕上げるのがコツです。
※茹で汁を加えてしっかり乳化させることで、ソースがパスタによく絡みお店のような味になります。
※甘唐辛子はまれに辛い個体があるので、気になる場合は少し切って味見をしてから使うと安心です。
※パスタは表示より1分短く茹で、フライパンでソースと一緒に仕上げると、ちょうどよいアルデンテになります。
※白ワインの代わりに酒でも作れますが、白ワインの方が風味よく仕上がります。

160g spaghetti
300g clams, sand removed
6 sweet green peppers (manganji or fushimi peppers)
2 cloves garlic
1 dried red chili, seeds removed
100ml white wine
2 tbsp olive oil
2 tsp salt (for boiling, per 1L water)
Italian parsley, finely chopped (as needed)
1 tbsp olive oil (to finish)
Instructions
Scrub the clams well by rubbing the shells together, then drain.
Trim the sweet peppers and slice diagonally into thin pieces (remove the seeds if large).
Finely chop the garlic.
Bring 1 litre of water to a boil with 2 tsp salt,
and start cooking the spaghetti 1 minute short of the package time.
Place the olive oil, garlic, and red chili in a frying pan
and heat gently over low heat until fragrant.
Once the garlic begins to color, add the sweet peppers and sauté briefly over medium heat.
Add the clams and white wine, cover,
and steam over medium heat for 2–3 minutes until the clams open.
Once the clams have opened, add a ladleful (about 80ml) of pasta water,
and swirl the pan to emulsify the sauce.
Add the cooked spaghetti to the pan
and toss with the sauce for about 1 minute to finish cooking.
Remove from the heat, drizzle with the finishing olive oil,
and scatter the Italian parsley over the top.
※ Clams toughen when overcooked — work quickly once they open.
※ Emulsifying the sauce with the pasta water is what makes it cling to the noodles for a restaurant-quality result.
※ Sweet green peppers occasionally have a spicy one in the bunch — taste a small piece first if you’re concerned.
※ Boil the pasta 1 minute short and finish it in the pan with the sauce for a perfect al dente texture.
※ Sake can be substituted for white wine, though wine gives a more aromatic finish.
