ゴーヤチャンプルー Goya Champuru (Okinawan Bitter Melon Stir-Fry)

ゴーヤ・豚バラ・豆腐・卵で作る、沖縄の定番家庭料理ゴーヤチャンプルー。
ゴーヤに塩と砂糖をまぶすひと手間で苦味がぐっと抑えられ、初めての方でも食べやすい味に仕上がります。

ゴーヤのビタミンCは加熱に強く、含有量は野菜の中でもトップクラス。苦味成分のモモルデシンには食欲増進や胃腸を整える働きがあります。
豚バラのビタミンB1と豆腐のたんぱく質も合わさって、夏バテ対策にこれ以上ない組み合わせです。
豆腐はレンジで水切りしてから焼き色をつけることで、崩れにくく香ばしく仕上がります。

Tossing the goya with salt and sugar beforehand tames its bitterness, making it approachable even for first-timers.

The vitamin C in goya is heat-stable and among the highest of any vegetable. Its bitter compound, momordicin, stimulates appetite and supports healthy digestion.
Combined with the vitamin B1 in pork belly and the protein in tofu, it’s an unbeatable lineup for fighting summer fatigue.
Draining the tofu in the microwave and searing it until golden keeps it from crumbling and adds a lovely toasty flavor.


【材料】(2人分)

ゴーヤ 1/2本
豚バラ薄切り肉 100g
木綿豆腐 1/2丁(約150g)
卵 1個
サラダ油 小さじ1
ごま油 小さじ1
かつお節 適量

【下味・調味料】

塩(ゴーヤ下味用) 少々
砂糖(ゴーヤ下味用) 小さじ1
塩こしょう(豚肉下味用) 少々
塩こしょう 少々
醤油 小さじ2


【作り方】

豆腐はキッチンペーパーで包み、耐熱皿にのせて
600Wの電子レンジで2分加熱して水切りする。
粗熱が取れたら手で一口大にちぎる。

ゴーヤは縦半分に切り、スプーンで種とわたを取り除く。
5mm幅に切り、塩少々と砂糖小さじ1をまぶして混ぜ、
5分ほど置いたら水気をしっかり絞る。

豚バラ肉は一口大に切り、塩こしょうをふる。
ボウルに卵を割りほぐしておく。

フライパンにサラダ油を熱し、豆腐を並べ入れて
表面に焼き色がつくまで焼き、一度取り出す。

同じフライパンにごま油を入れ、ゴーヤを中火で炒める。

豚肉を加えて色が変わるまで炒め、
豆腐を戻し入れて全体を混ぜる。

溶き卵を回し入れ、大きく混ぜながら炒め合わせる。

塩こしょうと醤油で味を調え、器に盛る。
かつお節をたっぷりちらして完成。

※ゴーヤに塩と砂糖をまぶすことで苦味が抑えられ、食べやすくなります。炒める前に水気をしっかり絞るのがポイントです。
※苦味が苦手な方は、1〜2mm幅の薄切りにして塩もみすると、さらに苦味が和らぎます。
※豆腐はレンジで水切りすると時短に。しっかり焼き色をつけてから取り出すと崩れにくくなります。
※卵は最後に加えて手早く混ぜると、ふんわりとした仕上がりになります。
※かつお節の旨味が味を引き締めるので、仕上げにたっぷりかけるのがおすすめです。


Ingredients (serves 2)

1/2 goya (bitter melon)
100g thinly sliced pork belly
1/2 block firm tofu (about 150g)
1 egg
1 tsp cooking oil
1 tsp sesame oil
Bonito flakes (as needed)

Seasoning

A little salt (for the goya)
1 tsp sugar (for the goya)
A little salt and pepper (for the pork)
A little salt and pepper
2 tsp soy sauce


Instructions

Wrap the tofu in paper towels, place on a heatproof plate,
and microwave at 600W for 2 minutes to drain.
Once cool enough to handle, tear into bite-sized pieces by hand.

Cut the goya in half lengthwise and scrape out the seeds and pith with a spoon.
Slice into 5mm pieces, toss with a little salt and 1 tsp sugar,
let sit for about 5 minutes, then squeeze out the moisture firmly.

Cut the pork into bite-sized pieces and season with salt and pepper.
Beat the egg in a bowl.

Heat the cooking oil in a frying pan, arrange the tofu pieces,
and sear until golden on the surface, then remove.

Add the sesame oil to the same pan and stir-fry the goya over medium heat.

Add the pork and cook until it changes color,
then return the tofu and mix everything together.

Pour in the beaten egg and toss with large strokes to combine.

Season with salt, pepper, and soy sauce, then plate.
Top generously with bonito flakes to finish.

※ Tossing the goya with salt and sugar softens the bitterness. Be sure to squeeze out the moisture well before stir-frying.
※ If you’re sensitive to bitterness, slice the goya into 1–2mm pieces and rub with salt for an even milder taste.
※ Draining the tofu in the microwave saves time, and searing it until golden keeps it intact during stir-frying.
※ Add the egg last and mix quickly for a soft, fluffy finish.
※ The umami of bonito flakes ties the dish together — pile them on generously at the end.
