【材料】(2人分・4個分)
キャベツ 大きめの葉 4枚
合いびき肉(または豚ひき肉) 200g
ピーマン 2個
玉ねぎ 1/4個
卵 1個
パン粉 大さじ3
塩こしょう 少々
(あれば)しょうがのすりおろし 小さじ1/2
【煮汁】
だし汁 400ml
醤油 大さじ1と1/2
みりん 大さじ1
酒 大さじ1
塩 小さじ1/3
【仕上げ(お好みで)】
大根おろし 適量
小ねぎ(小口切り) 適量
七味唐辛子 お好みで
【作り方】
キャベツは芯を切り落とさずに1枚ずつはがす。
鍋にたっぷりの湯を沸かし、2〜3分ゆでてしんなりさせる。
ざるに上げて冷まし、水気を拭き取る。
芯の太い部分は包丁で薄くそぎ落とす。
ピーマンはヘタと種を取り、みじん切りにする。
玉ねぎもみじん切りにする。
ボウルにひき肉・ピーマン・玉ねぎ・卵・パン粉・
塩こしょう・しょうがを入れ、
粘りが出るまでよく混ぜる。
肉ダネを4等分し、俵形にまとめる。
キャベツの葉を広げ、手前に肉ダネをのせる。
左右を折りたたみながら、手前から巻いていく。
巻き終わりを下にして鍋に並べる。
(爪楊枝で留めても、鍋にすき間なく詰めてもOK)
煮汁の材料をすべて注ぎ入れ、
落とし蓋をして中火にかける。
煮立ったら弱火にし、20〜25分ほど煮る。
器に盛り、煮汁をたっぷりかける。
お好みで大根おろし・小ねぎ・七味唐辛子を添えて完成。
※キャベツは芯の太い部分をそぎ落としておくと、巻きやすく火の通りも均一になります。
※鍋にすき間なく詰めて並べると、煮ている間にほどけにくくなります。爪楊枝を使う場合は食べる前に忘れず外しましょう。
※肉ダネは粘りが出るまでしっかり混ぜると、煮崩れしにくくなります。
※ピーマンは細かく刻むほど苦味が気になりにくく、お子さんでも食べやすくなります。
※翌日に温め直すと味がしみてさらに美味しくなります。作り置きにもおすすめです。
Ingredients (serves 2, makes 4 rolls)
4 large cabbage leaves
200g mixed ground meat (or ground pork)
2 green peppers
1/4 onion
1 egg
3 tbsp panko breadcrumbs
Salt and pepper (to taste)
1/2 tsp grated ginger (if available)
Broth
400ml dashi stock
1 1/2 tbsp soy sauce
1 tbsp mirin
1 tbsp sake
1/3 tsp salt
To Finish (optional)
Grated daikon (as needed)
Sliced green onion (as needed)
Shichimi chili pepper (to taste)
Instructions
Peel off the cabbage leaves one by one without cutting out the core.
Bring plenty of water to a boil and blanch the leaves for 2–3 minutes until pliable.
Drain, cool, and pat dry.
Shave down the thick part of the stem with a knife.
Remove the stems and seeds from the green peppers and chop finely.
Finely chop the onion as well.
In a bowl, combine the ground meat, green pepper, onion, egg, panko,
salt and pepper, and ginger,
and mix well until sticky.
Divide the filling into 4 portions and shape into ovals.
Lay a cabbage leaf flat and place the filling near the edge closest to you.
Fold in the sides and roll it up.
Place seam-side down in a pot.
(Secure with a toothpick, or pack the rolls snugly together.)
Pour in all the broth ingredients,
cover with a drop lid, and place over medium heat.
Once simmering, reduce to low heat and cook for 20–25 minutes.
Serve with plenty of broth,
topped with grated daikon, green onion, and shichimi chili pepper, if desired.
※ Shaving down the thick stem makes the leaves easier to roll and helps them cook evenly.
※ Packing the rolls snugly in the pot keeps them from unravelling. If using toothpicks, remember to remove them before serving.
※ Mixing the filling until sticky helps the rolls hold their shape while simmering.
※ The finer you chop the green peppers, the less noticeable their bitterness — good for younger eaters.
※ Reheated the next day, the flavors soak in even more. Great for meal prep.
