【材料】(2〜3人分・直径20cm 2枚分)
むき海老 150g
ニラ 1束(約100g)
にんじん 1/3本
玉ねぎ 1/4個
ごま油 大さじ2(焼き用)
【生地】
薄力粉 80g
片栗粉 40g
卵 1個
水 150ml
鶏ガラスープの素 小さじ1
塩 小さじ1/3
【たれ】
醤油 大さじ2
酢 大さじ1
砂糖 小さじ1
ごま油 小さじ1
白いりごま 小さじ1
コチュジャンまたは一味唐辛子 小さじ1/2
【作り方】
むき海老は背わたがあれば取り除く。
片栗粉少々(分量外)をまぶして軽くもみ、
流水で洗って水気をしっかり拭き取る。
大きければ半分に切る。
ニラは4cm長さに切る。
にんじんは細切り、玉ねぎは薄切りにする。
ボウルに生地の材料をすべて入れ、
ダマがなくなるまでよく混ぜる。
生地に海老・ニラ・にんじん・玉ねぎを加え、
全体をさっくり混ぜ合わせる。
小さめの器にたれの材料をすべて入れて混ぜておく。
フライパンにごま油大さじ1を熱し、
生地の半量を流し入れて薄く広げる。
中火で3〜4分、焼き色がつくまで焼く。
フライ返しで裏返し、
上から軽く押さえながらさらに3〜4分焼く。
同様にもう1枚焼く。
食べやすい大きさに切って器に盛り、
たれを添えて完成。

Ingredients (serves 2–3, makes two 20cm pancakes)
150g peeled shrimp
1 bunch garlic chives (about 100g)
1/3 carrot
1/4 onion
2 tbsp sesame oil (for frying)
Batter
80g cake flour
40g cornstarch
1 egg
150ml water
1 tsp chicken stock powder
1/3 tsp salt
Dipping Sauce
2 tbsp soy sauce
1 tbsp vinegar
1 tsp sugar
1 tsp sesame oil
1 tsp toasted white sesame seeds
1/2 tsp gochujang or ichimi chili pepper
Instructions
Remove the veins from the shrimp if present.
Rub lightly with a little cornstarch (extra), rinse under running water,
and pat dry thoroughly. Halve any large pieces.
Cut the garlic chives into 4cm lengths.
Julienne the carrot and thinly slice the onion.
In a bowl, combine all the batter ingredients
and mix until no lumps remain.
Add the shrimp, chives, carrot, and onion to the batter
and fold everything together gently.
Combine all the dipping sauce ingredients in a small dish.
Heat 1 tbsp sesame oil in a frying pan,
pour in half the batter, and spread it thinly.
Cook over medium heat for 3–4 minutes until golden.
Flip with a spatula and cook for another 3–4 minutes,
pressing down gently as it cooks.
Repeat with the remaining batter.
Cut into bite-sized pieces, plate,
and serve with the dipping sauce.
※ The cornstarch gives a crisp exterior and chewy interior, and keeps it crisp even as it cools.
※ Spreading the batter thinly is key to crispness — a thick pancake turns heavy in the middle.
