真ん中にのせた温泉卵をくずしながら食べると、まろやかさが加わって最後まで飽きずに楽しめます。
冷凍うどんを使えば12分ほどで完成するので、忙しい日のお昼にもぴったりです。
あんかけは冷めにくいので、朝晩が冷え込み始める秋にうれしい料理です。

【材料】(2人分)
冷凍うどん 2玉
しめじ 1/2パック
まいたけ 1/2パック
長ねぎ 1本
温泉卵 2個(市販または手作り)
【あんかけつゆ】
だし汁 600ml
醤油 大さじ2
みりん 大さじ2
塩 小さじ1/3
【とろみ付け】
片栗粉 大さじ1と1/2(水大さじ3で溶いておく)
【薬味(お好みで)】
おろししょうが 適量
七味唐辛子 適量
【作り方】
しめじは石づきを取ってほぐす。
まいたけは食べやすい大きさに手でさく。
長ねぎの白い部分は1cm幅の斜め切りにする。
青い部分は小口切りにして、薬味用に取っておく。
鍋にだし汁を入れて中火にかけ、
煮立ったらしめじ・まいたけ・長ねぎの白い部分を加えて
3〜4分煮る。
醤油・みりん・塩を加えて味を調える。
いったん火を弱め、水溶き片栗粉をもう一度よく混ぜてから
少しずつ回し入れ、混ぜながらとろみをつける。
再び中火にし、ふつふつと煮立つまで
30秒ほど加熱してとろみを安定させる。
冷凍うどんは袋の表示通りに電子レンジで加熱するか、
熱湯でゆでて湯を切る。
器にうどんを盛り、きのこと長ねぎのあんをたっぷりかける。
温泉卵をのせ、長ねぎの青い部分を散らす。
お好みでおろししょうがや七味唐辛子を添えて完成。
【温泉卵を手作りする場合】
鍋に湯1Lを沸騰させて火を止め、水200mlを加える。
冷蔵庫から出したての卵を静かに入れ、ふたをして12分置く。
冷水にとって冷ませば完成です。
※うどんの準備を始める前に作っておくとスムーズです。
※水溶き片栗粉は火を弱めてから入れるとダマになりません。入れたあとにしっかり煮立てることで、とろみが長持ちします。
※きのこは手でさくと断面がでこぼこになり、あんがよく絡みます。
※長ねぎは白い部分を具に、青い部分を薬味にすると、1本を無駄なく使い切れます。
※とろみが強すぎるときはだし汁や水を少し足して調整してください。
※おろししょうがを加えると体がぽかぽか温まります。七味唐辛子を振ればピリ辛にもなります。
Ingredients (serves 2)
2 portions frozen udon noodles
1/2 pack shimeji mushrooms
1/2 pack maitake mushrooms
1 long green onion
2 onsen tamago (store-bought or homemade)
Thick Dashi Sauce
600ml dashi stock
2 tbsp soy sauce
2 tbsp mirin
1/3 tsp salt
To Thicken
1 1/2 tbsp cornstarch (dissolved in 3 tbsp water)
Condiments (optional)
Grated ginger (as needed)
Shichimi chili pepper (as needed)
Instructions
Trim the shimeji and separate into clusters.
Tear the maitake into bite-sized pieces by hand.
Cut the white part of the green onion diagonally into 1cm slices.
Thinly slice the green tops and set aside as a garnish.
Bring the dashi to a simmer in a pot over medium heat,
add the shimeji, maitake, and white part of the green onion,
and simmer for 3–4 minutes.
Season with the soy sauce, mirin, and salt.
Lower the heat, stir the cornstarch slurry well,
and pour it in gradually while stirring to thicken.
Return to medium heat and let it bubble
for about 30 seconds to set the thickness.
Microwave the frozen udon according to the package instructions,
or boil it and drain.
Place the udon in bowls and ladle over plenty of the mushroom and onion sauce.
Top with an onsen tamago and scatter over the green onion tops.
Add grated ginger or shichimi chili pepper, if you like.
[To make onsen tamago at home]
Bring 1 liter of water to a boil, turn off the heat, and add 200ml cold water.
Gently lower in eggs straight from the fridge, cover, and leave for 12 minutes.
Cool in cold water and they’re ready.
※ Make these before you start the udon for smooth timing.
※ Adding the slurry over low heat prevents lumps; bringing it back to a boil afterward keeps the sauce thick for longer.
※ Tearing the mushrooms by hand creates rough surfaces that hold the sauce well.
※ Use the white part in the dish and the green tops as garnish to use the whole onion without waste.
※ If the sauce is too thick, loosen it with a little more dashi or water.
※ Grated ginger warms you right up, and a sprinkle of shichimi adds a spicy kick.
