大阪名物551蓬莱の豚まんを思わせる、具材はシンプルに豚肉と玉ねぎだけの豚まん。
キャベツやたけのこを入れず、粗みじんの玉ねぎをたっぷり使うのが最大のポイント。
玉ねぎの甘みと肉汁が一体になって、蒸し上がった瞬間からじゅわっとあふれる仕上がりになります。
皮はふんわり厚めに。ほんのり甘い生地が、しっかり味の具をやさしく包み込みます。
豚肉のビタミンB1は疲労回復に役立ち、玉ねぎの硫化アリルがその吸収を高めてくれる相性のよい組み合わせ。
蒸し料理なので油を使わず、揚げ物より軽やかに仕上がります。
からしと酢醤油を添えれば、本場の味わいにぐっと近づきます。

Pork buns inspired by the famous 551 Horai of Osaka, filled with nothing but pork and onion.
No cabbage, no bamboo shoots — just plenty of coarsely chopped onion, and that’s the whole secret.
The onion’s sweetness melds with the meat juices, bursting out the moment you break one open.
The dough is soft and generously thick, its gentle sweetness wrapping around the boldly seasoned filling.
Vitamin B1 in pork aids fatigue recovery, and the allyl sulfides in onion help the body absorb it — a naturally good pairing.
Being steamed rather than fried, these come out lighter with no added oil.
Serve with mustard and vinegar-soy sauce to get closest to the real thing.

【材料】(8個分)
【皮】
薄力粉 250g
ドライイースト 3g
砂糖 20g
塩 3g
ベーキングパウダー 3g
ぬるま湯(約40℃) 130ml
サラダ油 10g
【具】
豚ひき肉(粗挽きがおすすめ) 250g
玉ねぎ 1個(約200g)
おろししょうが 小さじ1
片栗粉 大さじ1
【具の調味料】
醤油 大さじ1
オイスターソース 大さじ1/2
砂糖 小さじ2
酒 大さじ1
ごま油 小さじ2
塩こしょう 少々
【つけだれ】
からし 適量
酢 適量
醤油 適量
【作り方】
[皮を作る]
ボウルに薄力粉・ドライイースト・砂糖・塩・
ベーキングパウダーを入れて軽く混ぜる。
ぬるま湯とサラダ油を加え、
ひとまとまりになるまで混ぜたら、
台に出して10分ほどこねる。
丸めてボウルに戻し、ラップをかけて
35〜40℃で40分ほど一次発酵させる。
(生地が2倍程度にふくらめばOK)
[具を作る]
玉ねぎは5mm角の粗みじん切りにする。
※細かくしすぎないのが551風のポイント。
粗めに切ることで甘みとシャキッとした食感が残ります。
ボウルに豚ひき肉・おろししょうがと
具の調味料をすべて入れ、
粘りが出るまでよく混ぜる。
玉ねぎと片栗粉を加えてさっくり混ぜ合わせる。
※片栗粉が玉ねぎの水分を抱え込み、肉汁として閉じ込めてくれます。
ラップをして冷蔵庫で30分ほど冷やす。
(脂が締まって包みやすくなります)
[包む]
発酵した生地のガスを抜き、8等分して丸める。
乾かないように濡れ布巾をかけておく。
生地を1つずつ、中央を厚めに周囲を薄く
直径12cmほどに伸ばす。
具の1/8量を中央にのせ、
縁をひだを寄せながら持ち上げて包み、
最後にねじってしっかり閉じる。
[二次発酵]
クッキングシートを敷いた蒸し器の台に並べ、
ラップをふんわりかけて
室温で15〜20分ほど休ませる。
[蒸す]
蒸し器の湯をしっかり沸騰させる。
ふたに布巾を巻いてから
強火で15分蒸す。
蒸し上がったらすぐにふたを開けずに
1分ほど待ってから取り出す。
からしと酢醤油を添えていただく。
※551風の決め手は具のシンプルさ。キャベツやたけのこ、しいたけは入れず、豚肉と玉ねぎだけで作るのがポイントです。
※玉ねぎは粗みじん(5mm角)に。細かくしすぎると食感と甘みが失われます。
※具は冷蔵庫で冷やしてから包むと、脂が締まって扱いやすくなります。
※蒸し器のふたに布巾を巻くのは、水滴が落ちて皮がべちゃっとするのを防ぐためです。
※蒸し上がり直後に急にふたを開けると、温度差で皮がしぼむことがあります。1分ほど待ってから取り出しましょう。
※冷めたら1個ずつラップで包んで冷凍保存できます(約1ヶ月)。食べるときは凍ったまま蒸し器で10分ほど蒸し直してください。
Ingredients (makes 8 buns)
Dough
250g cake flour
3g dry yeast
20g sugar
3g salt
3g baking powder
130ml lukewarm water (about 40°C)
10g cooking oil
Filling
250g ground pork (coarsely ground preferred)
1 onion (about 200g)
1 tsp grated ginger
1 tbsp cornstarch
Filling Seasoning
1 tbsp soy sauce
1/2 tbsp oyster sauce
2 tsp sugar
1 tbsp sake
2 tsp sesame oil
Salt and pepper (to taste)
Dipping Sauce
Japanese mustard (to taste)
Vinegar (to taste)
Soy sauce (to taste)
Instructions
[Make the dough]
In a bowl, combine the flour, dry yeast, sugar, salt,
and baking powder, and mix lightly.
Add the lukewarm water and oil,
mix until it comes together,
then turn out and knead for about 10 minutes.
Shape into a ball, return to the bowl, cover with plastic wrap,
and let rise at 35–40°C for about 40 minutes.
(It should roughly double in size.)
[Make the filling]
Chop the onion into coarse 5mm pieces.
※ Don’t chop it too fine — this is the key to the 551 style.
Coarse pieces keep their sweetness and crisp texture.
In a bowl, combine the ground pork, grated ginger,
and all the filling seasonings,
and mix well until sticky.
Fold in the onion and cornstarch.
※ The cornstarch holds the onion’s moisture, trapping it as juice.
Cover and chill in the refrigerator for about 30 minutes.
(The firmed-up fat makes wrapping much easier.)
[Wrap]
Punch down the risen dough, divide into 8, and shape into balls.
Cover with a damp cloth to prevent drying.
Roll each piece into a 12cm circle,
thicker in the center and thinner at the edges.
Place one-eighth of the filling in the center,
gather the edges up in pleats,
and twist firmly to seal.
[Second rise]
Arrange on parchment paper in the steamer basket,
cover loosely with plastic wrap,
and rest at room temperature for 15–20 minutes.
[Steam]
Bring the water in the steamer to a full boil.
Wrap the lid in a cloth
and steam over high heat for 15 minutes.
Once done, wait about 1 minute before opening the lid.
Serve with mustard and vinegar-soy sauce.
※ The key to the 551 style is simplicity — just pork and onion, with no cabbage, bamboo shoots, or shiitake.
※ Chop the onion coarsely (5mm). Chopping too fine loses both texture and sweetness.
※ Chilling the filling firms up the fat and makes it much easier to handle.
※ Wrapping the steamer lid in a cloth prevents condensation from making the buns soggy.
※ Opening the lid abruptly can cause the buns to collapse from the temperature change — wait a minute first.
※ Once cooled, wrap individually and freeze for up to 1 month. Re-steam from frozen for about 10 minutes.
