【材料】(4人分・作りやすい分量)
トマト 2個(約300g)
玉ねぎ 1/2個
ピーマン 1個
(あれば)パプリカ 1/4個
イタリアンパセリまたはパクチー 適量
【ドレッシング】
白ワインビネガーまたは米酢 大さじ3
オリーブオイル 大さじ3
はちみつ 小さじ1/2
塩 小さじ1/2
あらびき黒こしょう 適量
(お好みで)にんにくのすりおろし 小さじ1/3
【作り方】
玉ねぎは5mm角の粗みじん切りにする。
水に5分ほどさらして辛味を抜き、
水気をしっかり絞る。
トマトはヘタを取り、5mm角に切る。
種のまわりの水分が多い場合は軽く取り除く。
ピーマン(あればパプリカも)はヘタと種を取り、
玉ねぎと同じくらいの大きさに刻む。
イタリアンパセリはみじん切りにする。
ボウルに酢とはちみつを入れ、
はちみつが溶けるまでよく混ぜる。
残りのドレッシングの材料を加えてさらに混ぜ合わせる。
刻んだ野菜をすべて加え、全体をよく和える。
ラップをして冷蔵庫で30分以上冷やし、
味をなじませたら完成。
※はちみつは先に酢と混ぜて溶かしておくと、全体に均一になじみます。
※はちみつの量はお好みで調整可能。酸味が苦手な方は小さじ1まで増やしてもバランスは崩れません。
※野菜は同じ大きさに刻むと、スプーンですくったときに味のバランスがそろいます。
※玉ねぎは水にさらして辛味を抜くのがポイント。新玉ねぎの季節は水にさらさなくてもOKです。
※冷蔵庫で2〜3日保存可能。日が経つほど味がなじむので、作り置きにも向いています。
※お好みで唐辛子の輪切りや一味唐辛子を加えると、甘辛のビナグレーテになります。
※1歳未満の乳児にはちみつを与えないでください。
Ingredients (serves 4, easy-to-make quantity)
2 tomatoes (about 300g)
1/2 onion
1 green pepper
1/4 paprika (if available)
Italian parsley or cilantro (as needed)
Dressing
3 tbsp white wine vinegar or rice vinegar
3 tbsp olive oil
1/2 tsp honey
1/2 tsp salt
Coarsely ground black pepper (to taste)
1/3 tsp grated garlic (optional)
Instructions
Dice the onion into 5mm pieces.
Soak in water for about 5 minutes to remove the sharpness,
then squeeze out the excess water firmly.
Remove the stems from the tomatoes and dice into 5mm pieces.
If they are very watery around the seeds, remove some of the liquid.
Remove the stems and seeds from the green pepper (and paprika, if using),
and dice to roughly the same size as the onion.
Finely chop the Italian parsley.
In a bowl, combine the vinegar and honey,
and stir until the honey dissolves.
Add the remaining dressing ingredients and mix well.
Add all the diced vegetables and toss everything together thoroughly.
Cover and chill in the refrigerator for at least 30 minutes
to let the flavors meld.
※ Dissolving the honey into the vinegar first helps it distribute evenly.
※ Adjust the honey to taste — up to 1 tsp still keeps the balance if you prefer less acidity.
※ Dicing everything to a uniform size means each spoonful has a balanced mix of flavors.
※ Soaking the onion removes its harsh bite. With sweet spring onions, you can skip this step.
※ Keeps for 2–3 days in the refrigerator and improves as it sits, making it great for meal prep.
※ Add sliced chili or a pinch of ichimi chili pepper for a sweet-and-spicy version.
