ゴーヤの肉詰め Stuffed Bitter Melon with Ground Pork

輪切りにしたゴーヤに肉ダネを詰めて焼き上げる、食べ応え抜群のおかず。
甘辛い照りだれが全体に絡んで、ゴーヤの苦味がぐっと和らぎ、ご飯が進む一品になります。
ゴーヤの内側にも片栗粉をまぶしておくのが、肉ダネがはずれにくくなるコツです。

ゴーヤのビタミンCは加熱に強く、野菜の中でもトップクラスの含有量。苦味成分のモモルデシンには食欲増進や胃腸の働きを助ける作用があります。
豚ひき肉のビタミンB1は糖質をエネルギーに変える働きがあり、夏の疲れが残る体をしっかりサポート。

Dusting the inside of the rings with cornstarch is the key to keeping the filling from slipping out.

【材料】(2人分)

ゴーヤ 1本(250g)
豚ひき肉 150g
玉ねぎ 30g
塩こしょう 少々
片栗粉 大さじ1
サラダ油 大さじ1
酒 大さじ1

【たれ】

砂糖 大さじ1/2
みりん 大さじ1
醤油 大さじ1


【作り方】

ゴーヤは両端を切り落とし、1.5cm幅の輪切りにする。
スプーンで種とワタをくり抜く。

玉ねぎはみじん切りにする。

ボウルに豚ひき肉・玉ねぎ・塩こしょう・
片栗粉を入れ、粘りが出るまでよく混ぜる。

ゴーヤの内側にも片栗粉(分量外)を薄くまぶし、
肉ダネを詰めて形を整える。

フライパンにサラダ油大さじ1を熱し、ゴーヤを並べて両面を焼く。

酒大さじ1を加えてフタをし、弱中火で5〜8分蒸し焼きにする。

砂糖・みりん・醤油を加え、煮からめたら完成。

※ゴーヤの内側にも片栗粉をまぶすと、肉ダネがはずれにくくなります。
※ワタは苦味の元になるので、スプーンでしっかりこそげ取りましょう。苦味が苦手な方は白い部分まで丁寧に取り除くとより食べやすくなります。
※加熱時間は様子を見て調節し、中までしっかり火を通してください。竹串を刺して透明な肉汁が出れば火が通っています。
※肉ダネは粘りが出るまでしっかり混ぜると、焼いている間に崩れにくくなります。
※お好みで豆板醤や一味唐辛子をたれに加えると、ピリ辛の大人味にアレンジできます。


Ingredients (serves 2)

1 goya / bitter melon (250g)
150g ground pork
30g onion
Salt and pepper (to taste)
1 tbsp cornstarch
1 tbsp cooking oil
1 tbsp sake

Sauce

1/2 tbsp sugar
1 tbsp mirin
1 tbsp soy sauce


Instructions

Trim both ends of the goya and cut into 1.5cm rings.
Scoop out the seeds and pith with a spoon.

Finely chop the onion.

In a bowl, combine the ground pork, onion, salt and pepper,
and cornstarch, and mix well until sticky.

Lightly dust the inside of each goya ring with cornstarch (extra),
then pack in the pork mixture and smooth the surface.

Heat 1 tbsp oil in a frying pan
and cook the stuffed rings on both sides until browned.

Add 1 tbsp sake, cover with a lid,
and steam over low-medium heat for 5–8 minutes.

Add the sugar, mirin, and soy sauce,
and cook until the sauce coats everything.

※ Dusting the inside of the rings with cornstarch keeps the filling from slipping out.
※ The pith is the main source of bitterness — scrape it out thoroughly with a spoon. Removing the white part carefully makes it milder still.
※ Adjust the cooking time as needed to ensure the filling is cooked through. Clear juices from a skewer test mean it’s ready.
※ Mixing the filling until sticky helps it hold together while cooking.
※ Add doubanjiang or ichimi chili pepper to the sauce for a spicier, more grown-up version.
