豚バラとゴーヤのスタミナ丼 Stamina Rice Bowl with Pork Belly and Bitter Melon

【材料】(2人分)

豚バラ薄切り肉 200g
ゴーヤ 1本
玉ねぎ 1/2個
にんにく(みじん切り) 2かけ
ご飯 2膳分
ごま油 大さじ1
塩 少々(ゴーヤ下処理用)
砂糖 小さじ1(ゴーヤ下処理用)
塩こしょう 少々(豚肉用)

【たれ】

醤油 大さじ2
みりん 大さじ2
酒 大さじ1
砂糖 小さじ1
オイスターソース 小さじ1
豆板醤(お好みで) 小さじ1/2

【トッピング(お好みで)】

温泉卵または卵黄 2個分
白いりごま 適量
小ねぎ(小口切り) 適量


【作り方】

ゴーヤは縦半分に切り、スプーンで種とわたをしっかり取り除く。
3〜4mm幅の薄切りにし、塩少々と砂糖小さじ1をまぶして
5分ほど置き、水気をしっかり絞る。

玉ねぎは薄切りにする。
豚バラ肉は食べやすい大きさに切り、塩こしょうをふる。

小さめのボウルにたれの材料をすべて入れて混ぜ合わせておく。

フライパンにごま油とにんにくを入れて弱火で熱し、
香りが立ったら豚バラ肉を加えて中火で炒める。

豚肉の色が変わったら玉ねぎを加え、
しんなりするまで炒める。

ゴーヤを加えて2分ほど炒め合わせる。

たれを回し入れ、強めの中火で汁気が少なくなるまで
手早く炒め絡めたら火を止める。

丼にご飯を盛り、具材をたっぷりのせる。
お好みで温泉卵をのせ、白いりごまと小ねぎを散らして完成。

※ゴーヤは塩と砂糖をまぶして水気を絞ることで、苦味がぐっと和らぎます。苦味が苦手な方はさらに薄く切ると食べやすくなります。
※わたは苦味の元になるので、スプーンでしっかりこそげ取るのがポイントです。
※豚バラから脂が出るので、油は控えめでOK。脂が多すぎる場合はキッチンペーパーで軽く拭き取ってください。
※温泉卵をのせると苦味と辛味がまろやかになり、コクもアップします。
※豆板醤の量で辛さを調整できます。しっかりピリ辛にしたい方は小さじ1まで増やしてもOKです。


Ingredients (serves 2)

200g thinly sliced pork belly
1 goya (bitter melon)
1/2 onion
2 cloves garlic, finely chopped
2 servings cooked rice
1 tbsp sesame oil
A little salt (for prepping the goya)
1 tsp sugar (for prepping the goya)
Salt and pepper (for the pork)

Sauce

2 tbsp soy sauce
2 tbsp mirin
1 tbsp sake
1 tsp sugar
1 tsp oyster sauce
1/2 tsp doubanjiang (optional)

Toppings (optional)

2 onsen tamago (soft-cooked eggs) or egg yolks
Toasted white sesame seeds (as needed)
Sliced green onion (as needed)


Instructions

Cut the goya in half lengthwise and scrape out the seeds and pith thoroughly with a spoon.
Slice into 3–4mm pieces, toss with a little salt and 1 tsp sugar,
let sit for about 5 minutes, then squeeze out the moisture firmly.

Thinly slice the onion.
Cut the pork belly into bite-sized pieces and season with salt and pepper.

In a small bowl, combine all the sauce ingredients and mix well.

Heat the sesame oil and garlic in a frying pan over low heat.
Once fragrant, add the pork belly and stir-fry over medium heat.

Once the pork changes color, add the onion
and cook until softened.

Add the goya and stir-fry for about 2 minutes.

Pour in the sauce and stir-fry quickly over medium-high heat
until the liquid has mostly reduced, then remove from the heat.

Spoon rice into bowls and top generously with the stir-fry.
Add an onsen tamago if desired, and finish with sesame seeds and green onion.

※ Tossing the goya with salt and sugar and squeezing out the moisture greatly reduces the bitterness. Slice it even thinner if you’re sensitive to it.
※ The pith is the main source of bitterness — scrape it out thoroughly with a spoon.
※ Pork belly releases plenty of fat, so go easy on the oil. Blot away any excess with a paper towel.
※ An onsen tamago mellows both the bitterness and the heat while adding extra richness.
※ Adjust the doubanjiang to taste — increase up to 1 tsp for a bolder spicy kick.
