Chewy homemade gnocchi made from potato and flour, tossed in a smooth cream sauce of pumpkin and milk.
The sauce’s vivid orange color makes it perfect for a Halloween table.
Cut the pumpkin skin into jack-o’-lantern eyes and mouths for a playful Halloween lunch.
Made without heavy cream — just pumpkin and milk — it has a gentle sweetness and richness while staying light.
Pumpkin is a leafy-green-level source of beta-carotene and also contains vitamins E and C.
The vitamin C in potatoes is protected by starch and holds up to heat, and milk adds calcium.
Shaping gnocchi feels a bit like playing with clay, so it’s fun to make together as a family.
Ingredients (serves 2)
Gnocchi
2 potatoes (about 300g)
80–100g cake flour
1 egg yolk (optional)
A pinch of salt
1 tbsp grated cheese
Cake flour for dusting (as needed)
Pumpkin Cream Sauce
1/4 kabocha squash (about 200g without skin and seeds)
1/4 onion
10g butter
200ml milk
1 tsp granulated consommé
Salt and pepper (to taste)
2 tbsp grated cheese
To Finish
Coarsely ground black pepper (as needed)
Parsley, finely chopped (optional)
Instructions
[Cook the potatoes]
Wash the potatoes well and wrap each in plastic wrap.
Microwave at 600W for 6–7 minutes, until a skewer slides through easily.
While still hot, hold with paper towels and peel,
then place in a bowl and mash until smooth with a fork or masher.
※ Mash while hot — once cooled, potatoes turn gluey.
[Make the gnocchi dough]
Once the mashed potato has cooled slightly,
add 80g flour, the egg yolk, salt, and grated cheese, and mix lightly.
Bring it together into a ball by hand.
If sticky, add a little more flour at a time.
※ Don’t over-knead or the gnocchi will turn tough — stop as soon as it comes together.
[Shape]
Dust a work surface with flour and divide the dough in two.
Roll each into a 2cm-thick rope and cut into 2cm pieces.
Roll each piece over the back of a fork to make ridges.
※ The ridges help the sauce cling.
[Make the pumpkin sauce]
Remove the seeds and pith from the pumpkin, wrap it in plastic wrap,
and microwave at 600W for 4 minutes.
Once soft, scoop away the skin with a spoon
and mash the flesh until smooth.
Save the skin for the Halloween decoration.
Finely chop the onion.
Melt the butter in a frying pan and sauté the onion over medium-low heat
until softened.
Add the mashed pumpkin, milk, and consommé,
and warm over low heat, stirring.
Once smooth and saucy, season with salt and pepper.
※ If too thick, loosen with a little more milk.
[Boil the gnocchi]
Bring a large pot of water to a boil and add salt (extra).
Add the gnocchi and cook for about 1 minute after they float to the surface.
Lift out with a slotted spoon and drain.
[Finish]
Add the boiled gnocchi to the sauce in the frying pan,
add the grated cheese, and toss gently.
Plate and sprinkle with black pepper and parsley.
[Halloween decoration]
Cut the reserved pumpkin skin into small triangle eyes and a zigzag mouth.
Arrange on the sauce to make a jack-o’-lantern face.
※ Floury potatoes such as Danshaku make chewier gnocchi.
※ The amount of flour depends on the potatoes’ moisture. Start with 80g and add more only if the dough is sticky.
※ Boiled gnocchi stick together easily, so make the sauce first and toss them in as soon as they’re cooked.
※ Using the pumpkin skin as decoration means nothing goes to waste. Little ghost faces made from sliced cheese and nori are cute too.
※ Freeze uncooked gnocchi spread on a tray, then transfer to a freezer bag once frozen; they keep about 1 month. Boil straight from frozen.
※ For a richer sauce, use 150ml milk plus 50ml heavy cream.
