基本のコロッケ Classic Japanese Potato Croquettes

じゃがいもをレンジで加熱し、じっくり炒めた玉ねぎと合いびき肉を合わせて作る、昔ながらのコロッケ。
玉ねぎをあめ色になるまでじっくり炒めることで、驚くほど甘みとコクのある味わいになります。
衣は小麦粉・卵・水を混ぜたバッター液にすれば、粉→卵→パン粉の三度づけが不要。手も汚れず失敗しません。
さらに揚げ焼きにすることで油の量を抑えられ、後片付けもぐっとラクになります。

じゃがいものビタミンCは加熱に強く、でんぷんに守られているため壊れにくいのが特長です。
玉ねぎの硫化アリルは、豚肉に含まれるビタミンB1の吸収を高めて疲労回復を助けてくれます。
合いびき肉のたんぱく質も加わり、一品で満足感のあるメインおかずになります。

Cooking the onion patiently until deeply golden gives the filling remarkable sweetness and depth.
Using a batter of flour, egg, and water replaces the usual three-step flour-egg-panko coating — less mess, and far more reliable.
Shallow-frying rather than deep-frying keeps the oil to a minimum and makes cleanup much easier.

The vitamin C in potatoes is protected by their starch, so it holds up well to heat.
Allyl sulfides in onion boost the absorption of vitamin B1 from pork, supporting fatigue recovery.
With protein from the ground meat, a single croquette dish makes a genuinely satisfying main.


【材料】(4人分・8〜10個)

じゃがいも(メークインなど) 4個
玉ねぎ 1個
合いびき肉 200〜350g
サラダ油(炒め用・揚げ用) 適量
塩 適量
こしょう 少々
砂糖 ふたつまみ

【衣(バッター液)】

卵 1個
小麦粉 大さじ4
水 大さじ3
パン粉 適量

【付け合わせ(お好みで)】

レタス
トマト
きゅうり


【作り方】

[じゃがいもの下準備]
じゃがいもはよく洗い、皮つきのまま濡れたまま
1個ずつラップで包む。
耐熱皿にのせ、電子レンジで加熱する。
(600Wで4個なら10〜12分が目安)

[玉ねぎを炒める]
玉ねぎはみじん切りにする。

フライパンにサラダ油をひき、玉ねぎを中火で炒める。
透き通ってきたら弱めの中火に落とし、
焦がさないよう時々混ぜながらじっくり炒める。
※ここでしっかり時間をかけて、あめ色になるまで炒めるのが
 甘みとコクを出す最大のポイントです。

[付け合わせの準備]
レタスは冷水にさらしてシャキッとさせ、
水気をよく切ってちぎっておく。
トマトはくし形、きゅうりは薄切りにする。

[ひき肉を加えて炒める]
炒めた玉ねぎに合いびき肉を加え、
ほぐしながら色が変わるまで炒める。

塩・こしょう・砂糖ふたつまみを加えて味をつける。
※砂糖を少し加えると、味に丸みが出てまとまります。

[じゃがいもの加熱確認と蒸らし]
竹串がすっと通れば加熱完了。
固ければ追加で1〜2分加熱する。
ラップをしたまま5分ほど置いて蒸らす。

[じゃがいもの皮むき]
熱いうちにキッチンペーパーなどで包んで持ち、
手で皮をむく。
※蒸らした後なら皮がつるんとむけます。やけどに注意してください。

[具材を混ぜ合わせる]
ボウルにじゃがいもを入れ、
マッシャーやフォークで粗く潰す。
※少し粒が残るくらいがホクホク感が出ておすすめです。

炒めた玉ねぎとひき肉を加えて混ぜ合わせる。
味をみて、足りなければ塩・こしょうで調える。
粗熱を取っておく。

[成形]
粗熱が取れたタネを8〜10等分し、
手のひらで丸く成形する。
※丸型にすると割れにくく、揚げムラも出にくくなります。

[バッター液と衣付け]
ボウルに卵1個・小麦粉大さじ4・水大さじ3を入れ、
ダマがなくなるまでよく混ぜる。
※この配合がちょうどよいとろみになります。

成形したタネをバッター液にくぐらせ、
全体にパン粉をしっかりまぶす。

[揚げ焼き]
フライパンに深さ1〜1.5cmほどのサラダ油を入れ、
170〜180℃に熱する。
※パン粉を少し落として、シュワッと勢いよく浮いてくればOKです。

コロッケを入れ、片面2〜3分ずつ、
きつね色になるまで揚げ焼きにする。
※一度に入れすぎると油の温度が下がるので、
 2〜3個ずつ揚げてください。

油をよく切り、器に盛って付け合わせを添えたら完成。

※じゃがいもは男爵よりメークインのほうが粘りがあり、成形しやすく割れにくいです。ホクホク感重視なら男爵でも作れます。
※玉ねぎをじっくり炒める工程が味の決め手です。時間はかかりますが、ここを省略すると平坦な味になります。
※タネは必ず粗熱を取ってから成形してください。熱いまま衣をつけると水蒸気で破裂しやすくなります。
※バッター液を使えば「小麦粉→卵→パン粉」の三度づけが不要。手も汚れず、衣もはがれにくくなります。
※揚げ焼き中は何度も触らないこと。焼き色がつくまで待ってから返すと、衣がはがれません。
※タネは冷凍保存も可能。成形して衣をつける前の状態でラップに包み、約1ヶ月保存できます。


Ingredients (serves 4, makes 8–10 croquettes)

4 potatoes (waxy varieties such as May Queen)
1 onion
200–350g mixed ground meat
Cooking oil (for sautéing and frying), as needed
Salt (to taste)
Pepper (to taste)
2 pinches sugar

Batter Coating

1 egg
4 tbsp cake flour
3 tbsp water
Panko breadcrumbs (as needed)

To Serve (optional)

Lettuce
Tomato
Cucumber


Instructions

[Prepare the potatoes]
Wash the potatoes well and, while still wet,
wrap each one individually in plastic wrap.
Place on a heatproof dish and microwave.
(About 10–12 minutes at 600W for 4 potatoes.)

[Cook the onion]
Finely chop the onion.

Heat oil in a frying pan and sauté the onion over medium heat.
Once translucent, lower to medium-low
and cook slowly, stirring occasionally so it doesn’t burn.
※ Taking your time here until it turns deep golden
 is the single biggest key to sweetness and depth.

[Prepare the garnish]
Crisp the lettuce in cold water,
drain well, and tear into pieces.
Cut the tomato into wedges and slice the cucumber.

[Add the ground meat]
Add the ground meat to the cooked onion
and stir-fry, breaking it up, until it changes color.

Season with salt, pepper, and 2 pinches of sugar.
※ A little sugar rounds out the flavor and ties everything together.

[Check and steam the potatoes]
They’re done when a skewer slides through easily.
If still firm, microwave for another 1–2 minutes.
Leave wrapped for about 5 minutes to steam.

[Peel the potatoes]
While still hot, hold them with paper towels
and peel by hand.
※ After steaming, the skins slip off easily. Take care not to burn yourself.

[Combine the filling]
Place the potatoes in a bowl
and mash roughly with a masher or fork.
※ Leaving some texture gives a pleasantly fluffy result.

Add the cooked onion and meat and mix together.
Taste and adjust with salt and pepper.
Let cool slightly.

[Shape]
Divide the cooled mixture into 8–10 portions
and shape into rounds in your palms.
※ Round shapes are less likely to crack and cook more evenly.

[Batter and coat]
In a bowl, combine 1 egg, 4 tbsp flour, and 3 tbsp water,
mixing until no lumps remain.
※ This ratio gives exactly the right consistency.

Dip each croquette in the batter,
then coat thoroughly with panko.

[Shallow-fry]
Pour 1–1.5cm of oil into a frying pan
and heat to 170–180°C.
※ Drop in a little panko — if it sizzles and rises briskly, it’s ready.

Fry the croquettes for 2–3 minutes per side,
until golden brown.
※ Don’t crowd the pan, as it drops the oil temperature —
 fry just 2–3 at a time.

Drain well, plate, and serve with the garnish.

※ Waxy potatoes hold together better and crack less than floury ones, though floury varieties give a fluffier texture.
※ Slowly caramelizing the onion is what makes the flavor — skipping it leaves the filling flat.
※ Always let the filling cool before shaping. Coating it while hot can cause bursting from steam.
※ The batter replaces the usual flour-egg-panko sequence, keeping your hands clean and the coating secure.
※ Don’t move the croquettes repeatedly while frying — wait until browned before turning so the coating stays on.
※ The filling freezes well: wrap shaped portions before coating and freeze for about 1 month.
