豚バラとなす・ピーマンを甘辛い味噌だれで炒め合わせた、ご飯が進む定番おかず。

【材料】(2人分)
なす 3本(約270g)
ピーマン 3個
豚バラ薄切り肉 150g
塩 1つまみ(なす下味用)
砂糖 1つまみ(なす下味用)
塩 少々(豚肉用)
サラダ油 大さじ1
【味噌だれ】
味噌 大さじ2
みりん 大さじ2
醤油 小さじ1
砂糖 小さじ1
ごま油 小さじ2
だしの素 小さじ1/3
【作り方】
なすはヘタを取り、大きめの乱切りにする。
塩1つまみと砂糖1つまみをまぶして揉み込み、5分ほど置く。
ピーマンはヘタと種を取り、乱切りにする。
豚バラ肉は一口大に切る。
ボウルに味噌だれの材料をすべて入れてよく混ぜ合わせておく。
5分置いたなすの水分をキッチンペーパーでしっかり拭き取る。
フライパンを中火で熱し、豚バラ肉を炒める。
塩少々をふり、色が変わって火が通ったら一度取り出す。
同じフライパンにサラダ油を足し、
なすを皮目を下にして2分ほど炒める。
ピーマンを加えてさらに2分ほど炒め合わせる。
豚肉を戻し入れ、味噌だれを加える。
一度ふつっと沸騰させてから全体に手早く絡めたら火を止める。
器に盛って完成。

※だしの素は省いても、味噌とみりんのコクで十分美味しく作れます。

3 eggplants (about 270g)
3 green peppers
150g thinly sliced pork belly
1 pinch salt (for the eggplant)
1 pinch sugar (for the eggplant)
A little salt (for the pork)
1 tbsp cooking oil
Miso Sauce
2 tbsp miso
2 tbsp mirin
1 tsp soy sauce
1 tsp sugar
2 tsp sesame oil
1/3 tsp dashi powder
Instructions
Trim the eggplant and cut into large rough chunks.
Toss with a pinch each of salt and sugar, rub in, and let sit for about 5 minutes.
Remove the stems and seeds from the peppers and cut into rough chunks.
Cut the pork belly into bite-sized pieces.
In a bowl, combine all the miso sauce ingredients and mix well.
After 5 minutes, pat the eggplant dry thoroughly with paper towels.
Heat a frying pan over medium heat and stir-fry the pork belly.
Season with a little salt, and once cooked through, remove from the pan.
Add the cooking oil to the same pan
and stir-fry the eggplant skin-side down for about 2 minutes.
Add the peppers and stir-fry for another 2 minutes or so.
Return the pork to the pan and add the miso sauce.
Bring it to a quick simmer, then toss everything together swiftly and remove from the heat.
Plate and serve.
