【材料】(2人分)

鶏もも肉 1枚(約300g)
さつまいも 1本(約250g)
長ねぎ 1本
しいたけ 4枚(またはしめじ1/2パック)
しょうが 1かけ
にんにく 1かけ
塩こしょう 少々
酒 大さじ1(下味用)
片栗粉 大さじ1
ごま油 大さじ1

【煮汁】

水 200ml
鶏ガラスープの素 小さじ1
オイスターソース 大さじ1
醤油 大さじ1
砂糖 小さじ2
酒 大さじ1

【とろみ付け】

片栗粉 小さじ2(水小さじ4で溶いておく)

【お好みで】

豆板醤 小さじ1/2


【作り方】

さつまいもはよく洗い、皮つきのまま一口大の乱切りにする。
水に5分ほどさらしてアクを抜き、水気を拭き取る。
耐熱皿に入れてふんわりラップをかけ、
600Wの電子レンジで3分加熱する。

鶏もも肉は余分な脂を取り除き、一口大に切る。
塩こしょうと酒大さじ1を揉み込み、
片栗粉大さじ1を薄くまぶす。

長ねぎは3cm長さに切る。
しいたけは軸を取って半分に切る。
しょうがとにんにくは薄切りにする。

小さめのボウルに煮汁の材料をすべて入れて混ぜ合わせておく。

フライパンにごま油・しょうが・にんにくを入れて弱火で熱し、
香りが立ったら鶏肉を皮目を下にして並べる。
中火で触らずに焼き、皮がこんがりしたら裏返す。

さつまいも・長ねぎ・しいたけを加え、
長ねぎに焼き色がつくまで炒め合わせる。

煮汁を加えて煮立たせ、ふたをして
弱めの中火で8分ほど煮る。

ふたを取り、ときどき混ぜながら
煮汁が半分くらいになるまで煮詰める。

水溶き片栗粉をもう一度混ぜてから回し入れ、
全体にとろみがついたら火を止める。

器に盛って完成。

※さつまいもは電子レンジで下加熱しておくと、煮る時間が短くなり煮崩れも防げます。
※鶏肉は皮目を下にして触らずに焼くと、香ばしさが煮汁の旨味になります。
※さつまいもの甘みがあるので、砂糖は控えめでも十分おいしく仕上がります。
※煮ている間はさつまいもが崩れやすいので、混ぜるときはやさしく大きく混ぜてください。
※豆板醤を炒める段階で加えると、ピリ辛の大人味になります。
※長ねぎの青い部分を斜め切りにして仕上げに散らすと、彩りがよくなります。


Ingredients (serves 2)

1 chicken thigh (about 300g)
1 sweet potato (about 250g)
1 long green onion
4 shiitake mushrooms (or 1/2 pack shimeji)
1 knob ginger
1 clove garlic
Salt and pepper (to taste)
1 tbsp sake (for marinating)
1 tbsp cornstarch
1 tbsp sesame oil

Braising Sauce

200ml water
1 tsp chicken stock powder
1 tbsp oyster sauce
1 tbsp soy sauce
2 tsp sugar
1 tbsp sake

To Thicken

2 tsp cornstarch (dissolved in 4 tsp water)

Optional

1/2 tsp doubanjiang (chili bean paste)


Instructions

Wash the sweet potato well and cut into bite-sized chunks, skin on.
Soak in water for about 5 minutes, then pat dry.
Place in a heatproof dish, cover loosely with plastic wrap,
and microwave at 600W for 3 minutes.

Trim any excess fat from the chicken thigh and cut into bite-sized pieces.
Massage in the salt, pepper, and 1 tbsp sake,
then dust lightly with 1 tbsp cornstarch.

Cut the long green onion into 3cm lengths.
Remove the shiitake stems and halve the caps.
Thinly slice the ginger and garlic.

Combine all the braising sauce ingredients in a small bowl.

Heat the sesame oil, ginger, and garlic in a frying pan over low heat.
Once fragrant, add the chicken skin-side down.
Cook over medium heat without moving until the skin is golden, then flip.

Add the sweet potato, green onion, and shiitake,
and stir-fry until the green onion is lightly browned.

Pour in the sauce and bring to a boil, then cover
and simmer over medium-low heat for about 8 minutes.

Remove the lid and simmer, stirring occasionally,
until the sauce has reduced by about half.

Stir the cornstarch slurry again, pour it in,
and remove from the heat once everything is glossy and thickened.

Plate and serve.
