冷蔵庫で数日保存でき、温かいままでも冷やしても美味しいので、作り置きにもおすすめです。

Green eggplant, with its thick, meltingly tender flesh, is perfectly suited to slow simmering, soaking up all the savory depth of the tomatoes.
This dish brings together the nutrients of deeply colored vegetables: antioxidants in eggplant skin, lycopene in tomatoes, and vitamin C in paprika.
Sautéing in olive oil before simmering also improves the absorption of lycopene and beta-carotene.
It keeps for several days in the fridge and is delicious warm or chilled, making it ideal for meal prep.
【材料】(4人分)
青なす 2〜3本(約400g)
ズッキーニ 1本
パプリカ(赤・黄) 各1個
玉ねぎ 1個
にんにく 2かけ
カットトマト缶 1缶(400g)
オリーブオイル 大さじ4
塩 小さじ1
あらびき黒こしょう 適量
砂糖 小さじ1
ローリエ 1枚
(あれば)乾燥オレガノまたはタイム 小さじ1/2
イタリアンパセリまたはバジル 適量
【作り方】
青なすはヘタを取り、2〜3cmの大きめの乱切りにする。
(田舎風は大きめに切るのがポイント)
水に5分ほどさらしてアクを抜き、水気をしっかり拭き取る。
ズッキーニも同じくらいの大きさの乱切りにする。
パプリカはヘタと種を取って乱切りに、
玉ねぎはくし切りにする。
にんにくは薄切りにする。
厚手の鍋にオリーブオイル大さじ2とにんにくを入れて弱火で熱し、
香りが立ったら玉ねぎを加えて中火で炒める。
玉ねぎが透き通ってきたら、
オリーブオイル大さじ2を足して青なすを加え、
表面に油がまわるまで2〜3分炒める。

ズッキーニとパプリカを加えてさっと炒め合わせる。
カットトマト缶・塩・こしょう・砂糖・ローリエ・
オレガノを加えて全体を混ぜる。
煮立ったらふたをして弱火にし、
20〜25分ほど、野菜が柔らかくなるまで煮込む。
途中で一度混ぜ、水分が多い場合は
ふたを外して5分ほど煮詰める。
味を見て塩・こしょうで調え、ローリエを取り出す。
器に盛り、イタリアンパセリを散らして完成。
※青なすは普通のなすより果肉が厚く、加熱するととろりとした食感になります。大きめに切ることでその持ち味が活きます。
※なすは油をよく吸うので、炒める段階でオリーブオイルを足すのがポイント。しっかり油をまとわせると仕上がりがとろりとします。
※砂糖を少量加えることで、トマトの酸味がまろやかになり味がまとまります。
※冷蔵庫で3〜4日保存可能。日が経つほど味がなじみ、翌日以降のほうが美味しくなります。
※温かいままはもちろん、冷やしても美味しくいただけます。パスタソースやオムレツの具にしても◎。
※お好みで一味唐辛子やタバスコを加えると、ピリ辛のアクセントが楽しめます。
Ingredients (serves 4)
2–3 green eggplants (about 400g)
1 zucchini
1 red paprika and 1 yellow paprika
1 onion
2 cloves garlic
1 can chopped tomatoes (400g)
4 tbsp olive oil
1 tsp salt
Coarsely ground black pepper (to taste)
1 tsp sugar
1 bay leaf
1/2 tsp dried oregano or thyme (if available)
Italian parsley or basil (as needed)
Instructions
Trim the green eggplants and cut into large 2–3cm chunks.
(Large, rustic cuts are the point here.)
Soak in water for about 5 minutes, then pat dry thoroughly.
Cut the zucchini into similar-sized chunks.
Remove the stems and seeds from the paprika and cut into chunks.
Cut the onion into wedges and thinly slice the garlic.
Heat 2 tbsp olive oil and the garlic in a heavy pot over low heat.
Once fragrant, add the onion and cook over medium heat.
Once the onion turns translucent,
add another 2 tbsp olive oil and the eggplant,
and sauté for 2–3 minutes until coated in oil.
Add the zucchini and paprika and stir-fry briefly.
Add the chopped tomatoes, salt, pepper, sugar, bay leaf,
and oregano, and stir everything together.
Once simmering, cover and reduce to low heat,
cooking for 20–25 minutes until the vegetables are tender.
Stir once partway through; if there is too much liquid,
remove the lid and simmer for another 5 minutes to reduce.
Adjust the seasoning with salt and pepper, then remove the bay leaf.
Plate and scatter Italian parsley over the top to finish.
※ Green eggplant has thicker flesh than regular eggplant and turns wonderfully silky when cooked. Cutting it large lets that quality shine.
※ Eggplant absorbs plenty of oil, so adding more olive oil at the sautéing stage is key to a rich, silky finish.
※ A little sugar softens the acidity of the tomatoes and brings the flavors together.
※ Keeps for 3–4 days in the refrigerator and tastes even better the next day as the flavors meld.
※ Delicious warm or chilled, and excellent as a pasta sauce or omelette filling.
※ Add ichimi chili pepper or Tabasco for a spicy accent, if you like.
